A couple of weeks ago I shared with you guys the Pumpkin Cake Mix Crinkle Cookies I made using a Pillsbury Perfectly Pumpkin cake mix, today I’m back to share what I did with the other half of those cookies! You guys know I have dessert commitment issues, so it won’t surprise you that when I was in the middle of making the crinkle cookies I had a little thought, why not drizzle them in white chocolate! Pumpkin + white chocolate is a fall fav for me. I couldn’t decide which way to go…crinkle cookie or white chocolate drizzle…ah the pressure! So I did what any sane baker would do and split them in half and tried both.
1 Box Pillsbury Pumpkin Cake Mix
2 Eggs
1/3 Cup Vegetable Oil
5oz White Melting Chocolate
Makes approx. 15 cookies
Step 1: Preheat oven to 350. Mix together cake mix, eggs, and oil until it forms a nice dough.
Step 2: Work the dough together into a nice ball. If your dough is a little soft yet, wrap it in plastic wrap and place it in the fridge to chill for 20 minutes. Mine was ready to go right away.
Step 3: Line cookie sheet with parchament paper. I used my Bulls Eye baking parchment once again with the handy markers. Roll dough into 1in balls.
Step 4: Bake at 350 degrees for 10-12 minutes then let cool on a cooling rack.
Step 5: Once cookies are cooled melt approx. 5oz of white melting chocolate. Place in ziplock bag, twist, cut corner, and then drizzle over cookies.
Helpful Tip: Make sure to allow your cookies to cool before drizzling in chocolate. Warm chocolate may become runny and have a hard time hardening on a warm cookie.
Cake mix cookies are just too much fun – I can’t resist, especially when they involve pumpkin and white chocolate!
