I made these Pumpkin crinkle cookies before we left for Texas. We were headed out for one last dinner with friends and I wanted to bring treats, but with supplies low and the kitchen half packed I was a little stumped. Until I remembered I had a Pillsbury Pumpkin cake mix stashed away…
1 Box Pillsbury Pumpkin Cake Mix
2 Eggs
1/3 Cup Vegetable Oil
1 Cup Powdered Sugar (To Roll)
1 Cup Granulated Sugar (To Roll)
Makes approx. 15 cookies
Step 1: Preheat oven to 350. Mix together cake mix, eggs, and oil until it forms a nice dough.
Step 2: Work the dough together into a nice ball. If your dough is a little soft yet, wrap it in plastic wrap and place it in the fridge to chill for 20 minutes. Mine was ready to go right away.
Step 3: Line cookie sheet with parchament paper. I used my Bulls Eye baking parchment once again with the handy markers. Roll dough into 1in balls.
Step 4: Before you roll your dough into the powdered sugar, roll them in granulated sugar. While baking the graunlated sugar melts and the powedered sugar stays right on top!
Step 5: Bake at 350 degrees for 10-12 minutes then let cool on a cooling rack.

Hey Toni, I just found your blog for the first time today, it was your post about perfect sugar cookies,I very much enjoyed reading it. The Pumpkin cookies look great, I have made that kind with a cake mix many times they are delicious. Have you tried the gooey butter cookie kind made with a cake mix and cream cheese? They are our new favorite cake mix cookie.

These are my favorite!!!!!! I add white chocolate chips to it and eat entirely too many. Also good with cinnamon chips. We are currently doing Cherry Chocolate crinkle cookies. Yum-O
