Hellllooooo there! Geesh, it feels like forever since I’ve shared a new post! Did you think maybe I had disappeared, drowned in my sprinkles, tangled in baker’s twine? No worries, I’m here, just buried behind a large pile of, paperwork, a full schedule, and a to do list far longer then I’d like to admit! A few weeks ago my oldest kiddo was super sick with Scarlet Fever (yes, it’s still around!) and ever since then I just can’t seem to catch up! So even though I’ve been a little too quiet here lately, behind the scenes it’s been crazy! I’d love to say things are going to be slowing down a bit, but that’s far from the truth! We have family flying in this week, 2 birthdays to celebrate, 2 other events to plan and host, and let’s not even talk about the hubs crazy “schedule” or lack of really. Maybe April will be bring a little less chaos?!
I’m so happy to finally have the time to sit down and share some of the treats I’ve been waiting to share with you! I made these Mint Oreo cupcakes like a month ago, I don’t even remember WHY I made them! (not that one needs a reason to bake cupcakes) Yes, it’s been just that crazy around here! Oreo cupcakes are always on the top favorites list for my test tasters but these mint flavored cupcakes are perfect for St. Patty’s day!
Here’s what you’re going to need:
1 Box Duncan Hines Devils Food Cake Mix + Ingredients Listed On Box
1 Package Mint Oreo Cookies
2 Cups Unsalted Butter
2 TBS Mint Extract
1 2Lb Bag Of Powdered Sugar (approx. 8 cups)
4-6 TBS Milk
Makes approx. 24 cupcakes.
Step 1: Preheat oven to 350, line 2 cupcake pans with 24 cupcake liners. Pull apart Oreo cookies and place the side with cream still attached, cream up in each cookie liner. Set aside the other Oreo Cookies halves.
Step 2. Mix Devils food cake mix as instructed on box. Spoon 2 – 2 1/2 TBS of batter into each cupcake liners. Bake at 350 degrees for 16 minutes.
Step 3: Place the remaining Oreo cookie tops in a food processor until they are fine crumbs. (or simply crush finely using ziplock or bowl) Set aside.
Step 4: In the bowl of an electric mixer, or a large mixing bowl, beat butter until light and fluffy. Add mint extract and mix until combined. Slowly add in powdered sugar. Once all of the powdered sugar is combined, beat it milk 1 TBS at a time until you have reached your desired consistency.
Step 5: While mixing, slowly sprinkle in Oreo cookie crumbs. I used about 1/3 cup but you can you more or less depending on how much Oreo flavor you want. Remember to save a little to sprinkle finished cupcakes.
Step 6: Once cupcakes have cooled, pipe icing onto cupcakes and sprinkle with remaining Oreo crumbs.
Now you have all these great cupcakes for St. Patricks day…but who will be the lucky one you share them with? ;)

Sounds like you’ve had a crazy month. I had scarlet fever as a kid and it lasted quite a while and was miserable. I do hope your kiddo is feeling better now and that no one else in the family gets it!

These were a huge hit; thank you for posting the recipe!
I froze them unfrosted, and they turned out great. I didn’t need as much frosting as this, but we are saving the extra ;) Also, I should have waited to gently fold the cookie crumbs into the frosting at the end, as when I whipped them in, they turned everything a brownish color. But everyone still loved them (all 72 of them!)
Am making these for St. Patrick’s Day this year!
