Chocolate Cherry Cut Out Cookies

Happy Valentine’s Day! One of the love {aka. buttercream} filled buttercream treats that I made to share this week were these chocolate cherry cut out chocolate cookie sandwhiches. (say that ten times fast!) A few weeks ago a sweet reader, Annie (hello!), sent me a little note and picture sharing some adorable fruit filled cut out cookies that she made after reading my sugar cookie post. They were pretty stinking cute…and I thought…why haven’t I ever made cut out cookies!? So inspired by Annie and Valentine’s day I set out to make some cut out cookies of my own…with sprinkles!

I used my favorite rolled chocolate cookie recipe from LilaLoa, using the same method of baking and preparing my sugar cookies as I explained in detail here. I filled the cookies by whipping up some of my regular buttercream and adding in some cherry extract + a little pink coloring. (the cherry can easily be swapped for another flavor) Then I just rolled these babies in sprinkles!

For the cutters I used a Wilton® heart cutter set picked up at Wal-Mart for less then $2.00! For the cookies I used the 4th heart (from the inside up) and for the center cut out I used the very smallest one. They worked perfectly!

This recipe and a half batch of this buttercream will make enough for 18 cookies sandwiches using similar size cutters. I chose to make the bottom of my cookie sandwich regular, so I cut out 9 regular hearts and 9 with heart openings. However, if you would like to make them double sided just cut them all with cutters.

I’m going to mix things up a bit today! Keeping it short and sweet we’re going to let the pictures do the talking!

Pretty simple, and pretty sweet! These make really great treats to share, handout, display, or just simply consume! I’m pretty sure you can count on more cut out cookies around here now…
