Well hello again, did ya miss me?! I sure have missed you! Busy can’t even begin to explain the craziness we’re currently calling life at the Millers! The kiddos started school last week (yes kiddos plural!) and it’s been a constant circle of dropping off and picking up between PreK and full day, holiday projects are in full force, cook book is underway (did you hear the news?!), I injured my shoulder, and on top of it all the hubs has been away at school. I’ve been itching to get a new blog post up but it’s just been TOO much crazy and not enough fun around here, I hope you forgive me! Will pancakes help?? Because I made pancakes to share…and not just any pancakes, fruity pebble pancakes, and beyond that..they’re baked! It’s like a big pan of happiness!

But while we’re talking pancakes, I have more big news to share! Over the next few months I’ll be teaming up with Krusteaz and a handful of other bloggers to bring you the Krusteaz Bakers Dozen! When I was asked to join along as a brand ambassador, I couldn’t say yes fast enough. You see, we’re major pancake people. My kids are known for their champion pancake eating habits that puts grown men to shame, they don’t play around when it comes to pancakes. I love to mix up their pancakes and see how I can make them different each time, and I’ve been wanting to bring some of those recipes to the blog for months. I knew this would be my perfect chance! Not only do they make awesome pancake mixes, Krusteaz has many different unique and delcious mixes that range from breads to molten chocolate cookies (hello yum). So over the next few months I’ll be challenged to take a simple baking mix and make it even better with a fun new twist that I’ll share with all of you. I can’t wait to get started!

But for now, are you ready to hear about these pancakes? As I mentioned above, we’re pancake people, and my kids put them down like magic – now they’re here and now there not. While I love making them pancakes as a garuntee meal time win, I dislike that I spend the entire time flipping out pancakes as fast as I can while they scarf them up. I’m lucky if there’s even one left for me to enjoy and if there is it’s after the others have a belly full of pancakes and are ready to leave the dinner table. So a little while back I thought, why can’t we bake pancakes? Whats the deal with this one at a time thing? Since then I’ve been experimenting with several different ways to serve pancakes, and boy am I glad I did! I wanted to first try baking them like a cake and while we were getting crazy I thought hey let’s throw in another breakfast win, Fruity Pebbles!

Fruity Pebble Pancakes

These Fruity Pebbles Pancakes are the first baked and cut version I tried. You simply mix up the batter, fold in Fruity Pebbles, pour into a greased baking pan, and bake! Seriously it’s SO easy! Once they are done it’s simply cut and serve, and everybody fills their bellies with warm delicious pancakes at the same times. Seriously guys, game changer.

Here’s what you’re going to need:

4 Cups Krusteaz Buttermilk Pancakes

2 2/3 Cup Water

2/3 Cup Fruity Pebbles + 1/4 Cup

For Topping:

Fruity Pebbles

Syrup

Butter

Whipped Cream or 1/2 Pint Whipping Cream + 2-3 Tbsp. Powdered Sugar

Step 1: Preheat oven to 350 and lightly grease 10X15 baking pan.

Step 2: Mix together water and pancake mix until combined.

Step 3: Fold in 2/3 cup of Fruity Pebbles, pour mix evenly into lightly greased 10X15 baking pan. Use the remaining 1/4 cup Fruity Pebbles to sprinkle over the top.

Step 4: Bake at 350 degrees for 15-17 minutes.

Step 5: Cut into squares with pizza cutter or knife and serve warm topped with butter, syrup, whipped cream, and more Fruity Pebbles.

Seriously guys these were so good! They were such a fun new twist on an old favorite, and the baking process was SO much easier. We will definitely be baking many more pancakes in the future! Stay tuned for more fun pancakes, and fun new recipes and baking adventures with Krusteaz!
