Funfetti Strawberry Cookies

Have you ever dreamed about new funfetti cookie flavors? Maybe funfetti strawberry cookies? If so you’re in the right spot today because I have the perfect mega yummy cookie recipe for you. (If the answer was no you don’t dream about strawberry cookies then we need to have a talk about your dreams, and the lack of cookies involved.) These new funfetti strawberry cookies went straight to the “things that make our tummy happy” list here at the Miller home. They also live on the “things that make mommy happy” list. Easy, quick, crazy soft, yummy, and they include sprinkles.

If you ever made my giant chewy chocolate chip bakery-style cookies, you know I love all cookies that are soft, buttery, and well giant! These strawberry cookies are a remix of that recipe which has become crazy popular. I was feeling like mixing it up just a bit this spring and came out of the kitchen with this new winning combo. I can’t wait for you guys to give these a try for yourself.

Easy Funfetti Strawberry Cookies

Strawberry Chip Funfetti Cookies

  • 1 stick softened unsalted butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1 3.4oz instant strawberry pudding
  • 2 1/4 cups flour
  • 1 tsp baking powder
  • 1 tsp butter extract
  • 1tsp vanilla extract
  • 1 cup white chocolate chips
  • 1 cup sprinkles

Step 1: Preheat oven to 350 degrees. Combined flour and baking powder in a bowl, set aside.

Step 2: In a separate bowl, beat together butter, granulated sugar, and instant pudding mix. Add in eggs then extract.

Step 3: Slowly mix in flour combination until a completely combined.

Step 4: Once your dough is ready, knead in chocolate and 3/4 cup sprinkles, set remaining sprinkles aside.

Step 5: Roll into balls. Dip the top of each cookie ball into remaining sprinkles.

Step 6: Bake on a parchment lined cookie sheet (several inches apart!) for 10-12 minutes at 350 degrees.
