Red Velvet Cake Mix Fudge

It’s true, I’ve made just about everything from a cake mix it’s like a crazy challenge I’ve given myself or something. Normal people see a cake mix used to make easy cake or cupcakes, I see a chance to be creative or insane – however you want to look at it really. I’ve made cake mix cinnamon rolls, pie crust, puppy chow, dip, cookies, fudge….I’m sure I’m leaving some out but you get the point! My favorite still remains the birthday cake fudge, seriously it’s a big fav around here and it’s dangerously easy. Dangerous as in way too easy to make when you’re craving something sweet late at night ;).

Recently I thought I’d try making it with red velvet cake mix and kick it up a notch by adding a cream cheese layer. It was every bit as yummy as I imagined. The birthday cake fudge will still remain my ultimate favorite, but come on who can resist cream cheese? Not this baker that’s for sure! I love the fudgy red velvet cake batter taste of the fudge but the layer of cream cheese takes it for the win.

Here’s what you’re going to need:

2 Cups And 2 Tbsp Duncan Hines Red Velvet Cake Mix
2 Cups Powdered Sugar
1 Stick Butter
1/4 Cup Milk
2/3 Cup White Chocolate Chips (for red velvet layer)
2/3 Cup White Chocolate Chips (for cream cheese layer)
4oz Cream Cheese

Red Velvet Cake Mix Fudge

Step 1: Line a 8X8 pan with lightly greased foil or parchment paper. (I used a 8×6 this time for extra thick fudge and parchment paper since we were out of foil – I had a hard time getting it to lay nicely :( )

Step 2: In a large microwave safe bowl, whisk together cake mix and powered sugar. Cut up butter into 4-8 pieces and place in bowl. Add milk and butter to the bowl. Microwave for 2 minutes.

Step 3: Using a towel carefully remove bowl from microwave and add in 2/3 cup chocolate chips. Stir together until chocolate chips have melted and all is combined. Make sure to stir and press with spatula making sure all chocolate chips have melted and butter is fully incorporated.

Step 4: Pour into lined pan and press flat with spatula. Set aside.

Step 5: In a medium microwave safe mixing bowl heat 2/3 cup white chocolate chips for 30 seconds. Stir with spatula and heat again for 30 seconds. Stir in cream cheese. Work and press until cream cheese is completely combined into melted chocolate chips. Pour and level on top of red velvet fudge, add sprinkles if desired.

Step 6: Let sit in fridge for 1-25 minutes to firm then simply cut and serve!
