Pink Lemonade Crinkle Cookies

Hey guys! I’m not sure how it’s mid August already –crazy– but as the care free days of summer dwindle down for us, we’re spending time in Indiana enjoying family. Soon we’ll be back in New York and back to school just long enough to get ready to move to Texas. Geesh! But why focus on all of that chaos when we can talk about cookies?! These pink lemonade cake mix crinkle cookies are perfect for this time of year. Perfect for summer and tucking into lunch boxes for little lunch time treats!

Each time I make crinkle cookies it drives me bonkers that the powdered sugar always gets absorbed by the cookies and I end up sprinkling more on after baking (which totally takes away from the point!). So recently I came across an idea after making the red velvet cake mix crinkle cookies to fix tht little problem! So I swapped out the cake mix for Pilsbury’s pink lemonade cake mix and tried it out and these little lovelies came out just perfect!

Sweet yet tangy, soft yet chewy, and totally cute!

Here’s what you will need:
1 Box Pink Lemonade Cake Mix
2 Eggs
1/3 Cup Vegtable Oil
1 TSP Vanilla
Powdered Sugar For Coating
Granulated Sugar For Coating

Step 1: Preheat oven to 350. Mix together cake mix, eggs, oil, and vanilla until it forms a nice dough.

Step 2: Work the dough together into a nice ball. If your dough is a little soft yet, wrap it in plastic wrap and place it in the fridge to chill for 20 minutes. Mine was ready to go right away, and super easy to work with.

Step 3: Line cookie sheet with parchament paper. I used my Bulls Eye baking parchment once again with the handy markers. Roll dough into 1in balls.

Step 4: Now here’s where the new little trick comes in! Before you roll your dough into the powdered sugar, roll them in granulated sugar! While baking the graunlated sugar melts and the powedered sugar stays right on top! Really love this little trick.

Hopefully I’m not the last person in the world to learn this trick….but either way I totally love it! :)

Step 5: Bake at 350 degrees for 10-12 minutes then let cool on a cooling rack.

Recently I’ve been sticking cookies in the freezer for easy little treats to sneak in the kiddos lunch box. It’s the little things :).
