Circus Animal Ice Cream

I am so SO excited to share today’s post with you guys! A few days ago I noticed we were running low on homemade ice cream so I thought I better whip up a another batch or two. What can I say it’s well over 100 degrees for weeks now, ice cream is practically a food group here! This was my chance to use up the half bag of Circus Animal Cookies I’ve been hoarding in the pantry since I made these Circus Animal Truffles. As I explained before my kiddos go nuts over them (ok so do the hubs and I)! I wasn’t sure just how well they would mix into ice cream since they are already firm before freezing, but I just had to try it. The result was crazy yummy!

I simply whipped up some easy no machine vanilla ice cream, added a little pink to the mix, and swirled in some animal cracker bits. I decided to keep out the nonpareils because I knew their color would run. Instead I waited till I served the ice cream and then tossed on some nonpareils not only did it look like the cutest bowl of ice cream, it was so so good! The cookie bits were actually really great in the ice cream, they gave it a little bit of crunch and they were not too hard either as I worried. This ice cream was definitely a hit around here! Oh – and if you add a little tiny chocolate cookie camel climbing the ice cream mountain you just may score mom of the year, just sayin
.
Here’s what you’re going to need:

2 Cups Heavy Whipping Cream
1 Can 14oz Sweetened Condensed Milk
2 tsp. Vanilla Extract
1/2 Cup Chopped Circus Animal Cookies
Pink Food Coloring (Gel Works Best)

Step 1: Place metal mixing bowl and whisks in freezer for 5 minutes to chill. Whip 2 cups of heavy whipping cream until stiff peaks have formed.

Step 2: Pour in sweetened condensed milk and vanilla, whip just until combined. About 30 seconds.

Step 3: Put a small amount of pink food coloring in the ice cream mixture then whip for just a second or two, try not to combined it all the way so you have white and pink.

Step 4: Pour half of your whipping cream mixture into a 1.5 liter (aprox) container. Swirl in a layer of circus animal bits. Pour and smooth more ice cream mixture over the first layer and then finish with another layer of circus animal cookie bits. (Of course you can also just mix the cookie bits in with step 3, I simply liked having it “swirled” in because you have bites of smooth ice cream and then bites full of cookie bits)

Step 5: Freeze in container over night.

Ice cream will freeze solid but softens perfectly to serve after a few minutes left sitting out on the counter.

  6. This ice cream is so cute. Congrats on having a bag of circus animal cookies in your house and not eating every last one. I couldn’t do it.
